I was smoking pepperettes today, trying to hold temps at 175 while trying to get the internal temps to the cooked range. The SM025 would drop down as low as 158 then warm backup to 175. I ended up drying the pepperettes out too much trying to get them cooked. Anyone else ever experience wide temperature swings like this? Can't say If ever seen this happen before. It was 25f outside but no wind ....

I'm not sure what you mean. the Temp swing shouldn't have been enough to make that kind of difference.

have you done this before but this time it just didn't work?

17 isn't what I'd call "wide" is within normal range shouldn't have made a difference. that's less than a 10% variance. The problem is that it's not going to be able to hold the temp steady the lower you go. Keep in mind it cycles on and off, it's not designed to hold an exact temp. The electric elements aren't efficient at lower temps.
