Re: Specialty Sausage

I have made some really good fresh Italian Sausage. I wanted to try enhancing the flavor of my sausages by adding ingredients such as green peppers, garlic cloves, sun-dried tomatoes and various cheeses. Does anyone have any experience in making these types of pork sausages? Not sure the best way to do it. Any help would be appreciated.

Check out Len Polli's website. Lots of great sausage recipes. It's listed in the Sausage resources thread at the top of the forum. I've made his Fresh Garlic sausage several times, except I added a bunch more garlic.
