Hi Kids- I have not posted for some time now, probably years. I am back and with a vengeance. Mrs G and I are now low carbing it. That means the smoker goes into high gear. Today, it is Jerky Time!
I have had alot of success over the years, but I honestly think I have cooked my jerky, as opposed to drying it. I always use Hi Mountain, I always open and close the door. I get a real tasty product that people rave about. But, I never get that mahogany color I like. This time, I am gonna smoke it slower with more wood. I have eight lbs of London Broil. Gonna smoke all day Saturday. I have both rods and seafood grills. I like the rods, but will probably use both. The beauty of low carbing is I get to eat lots of meat. The downside is my beer that I brew will get mighty dusty. Dammit.
