Having just acquired my CS i have committed to smoking the turkey this year. I am having trouble locating a boneless turkey roast, have found breasts but we are not crazy about all white meat. Any suggestions here in Olahoma.

Herbert's Specialty Meats, mentioned in another thread, carries boneless stuffed turkeys. They're located in Tulsa or they will ship if that's not convenient for you. Also, if none of the stuffings appeal to you I'm sure that they will sell you one unstuffed.

If none of this works for you, contact any decent butcher that sells fresh turkeys. They should be able to bone one for you at an addditional cost.

How do they debone the turkey without leaving it in several pieces?

Same as a large chicken.
They can split the inside of the pieces,fillet the breast off the keel,pull meat and skin off,leave skin whole.

Another option is to buy a half breast and a leg quarter from the meat market.

I personally, would cook them bone on,but they will debone for you.
