I,m a fish guy and smoke alot of things for my store. This Thanksgiving is on me so I'm going to fry one turkey and smoke another. I need some advise on this one. How big a turkey do I get, do I brine, how long do I smoke it and what amount and what kind of wood do I use? Thx
