Okay, so we're getting fewer "how do I cook turkeys?" -- hopefully thanks to all the great forum postings and Turkey 101 Wink

Now I want to start collecting new techniques, recipes to add, since that seems to be the questions this year.

If you know/have/see any reasonable recipes for the following, please post and of course, credit the source if possible.

Know any good:

Injections
Brines
Poultry Rubs
Alternative Turkey Techniques

Appreciate all responses.

Randy's Deep Fried Turkey recipe (with pics):

The best thing I learned on Randy's site is to turn the oil down to 300 - 315. It keeps the skin from getting too dark.
