Anyone made turkey jerky, on purpose, I mean?

I tried some commercially made stuff yesterday and it was terrific. It was teriyaki and just the right moisture. But at $17.00/lb I don't think I'll be going back.

Searched the archives with no results for recipes.

Wild or tame turkey?

Tame. We don't have many of the wild kind around here. What was yours?

I thought about ordering the Apple wild cure, but decided it might be too strong for store-bought birds. I ordered the teriyaki mix instead and it was on the way before you posted your technique. It's the flavor that was on the stuff I got at the meat market and my wife liked it a lot.

Was your jerky moist? That's one of the things we liked best about it. Thanks again for your recipe. Any other suggestions you might have?
