Hey J. I am new as well but will try to help. I ASSUME you have a CS something? IF that is the case, depending on what you are smoking you can put your wood chunks in the box, load your meat and set the temp. IF you are doing a large cut like pork butt or brisket you can add up to 6oz. of wood. IF doing ribs or chicken I would start with 2oz. and adjust from there. Once that it done you wont need to add anymore wood. Thats it! Dont add wood during the smoke. Not needed. Depending on how you and your family like your smoke depends on the amount of wood you use. I like a heavy smoke, my wife likes a little lighter. Use more for more, and less for less. Make sense? ALSO, do your self a favor, spend some time in the Smokn oakies guide. VERY helpful!!!!!!!!!!
