Hi,

I am really confused. I am doing some ribs, second smoke, and have the temp set at 225. After several hours the temp begins to fall, so I turned up the dial a little. The temp goes up and then drops again. Is that the result of drafting within the smoker due to temp change, or is there something wrong with the smoker. thanks for the help with my other questions.

Do a search on this site with "temperature", "swing", "fluctuations", etc. and you will see that the topic has been discussed for a very very long time.

As Tom says above, you will be fine.

As your smoker gets a more patina finish internally the temp will stabilize a bit more, and it also depends on how much load (meat) is in the smoker, but pretty much set it and watch the pretty little wisp of smoke and read Dr BBQ's book and have a beer.
