OK... here is the corrected answer:


Smoke is different than the other two...

Smoke slows the fan down creating more smoldering and smoke. This should be for low temp use only.

Cook and Rest both run the same algorithm So.... if you want to run at 180 for 6-8 hours to lay some smoke on a brisket... use smoke... if you want to cook at 250-275... use the cook and rest modes for that... (rest can obviously be used to hold at a lower temp too)

That's all.. Sorry for the confusion I was misinformed in the past...
