I bought some Cryovac pork spare ribs from Costco last week. I did not open the Cryovac. I just put the Cryovac pork spare ribs in the fridge. I will not have time to smoke them till this weekend. I plan to prep and do rub one hour before the smoke.

Are they safe in the fridge till the "sell by date"?

I do not want it to spoil...

If I do have to freeze it... Should I freeze it in the Cryovac? And what is the best defrost method?

It's safe in the fridge until the sell date since it would have sat in the grocery cooler till then if it wasn't sold. The store would still sell it by sell date, and you will have had a few days after that.

I would leave it in the cryovac, wrap it in aluminum foil, and wrap with plastic wrap. Should be good in the freezer for a couple months.
