I decided to do a meat loaf again. It usually takes 3 hours at 250*. I had a problem keeping with the probe slipping out of the meat. I'm using one pound of meat and three ounces of hickory. To keep it simple I'm just going to cook for three hours and then check the temp with the thermapen. This time at 3 hours it was 160-165*. The results were great with just the right amount of smoke.
