I just looked at Steven Reichlen web page and he has an article on "Cutting Board Dressing". Basically you put Olive oil and herbs, salt, pepper, rosemary etc.on the cutting board. Put the hot meat on the board over the dressing and slice away coating the slices as you go along with the au jus. You could use any thing you wanted on the board depending on what you were trying to do. I thought it was a great idea
