Probe Sterilization

I clean off the heavy stuff with a warm soapy damp dishrag and use rubbing alcohol to sterilize, but the instructions may say something else.

Specifically during a long cook/or competition with different meats like chicken & pork.

Never actually "sterilized" a probe. Being a probe, it might not react unfavorably to high temperature water. I'd be careful to avoid getting water inside the probe though. Others have commented on dead probes from the same. After wiping off the gook (that's a real word. Look it up.), you might want to dip it, just short of the wire inlet, in hot water with some sort of detergent in it.
I like the alcohol idea but I'd only do that after I removed as much of the other stuff as possible.

I use a SOS pad to clean them,I check my probe in ice water and boiling water before every use. I then use wipes on them a short time before using.

I don't put my probe in the big meats until morning, use to, just don't see no need in it anymore.

Yep,ain't it amazin' how experience keeps on reinforcing the K.I.S.S method.

Quick bit of anti-bacterial spray sorts ours out!
