I use (2) AcruRite thermometers ( got a Lowes ) when I cook. I have noticed with the Cookshack that in the early stages of any cook the thermometers will not register a temperature......they only say HIGH. Later in the cook they will display the Temp. Is it the type of smoker ( steam ) or the brand of thermometer that causes this ? I did not have this problem when smoking with my propane/water smoker. Just looking for answers.
