Nice job CBA. Very informative. I don't have the cold smoke baffle, but can see how well it may work.

I smoked cheese right inside my Elite with the Amazing Smoker awhile back. I made enough to eat right away and to eat later. I vacuum sealed half of it and am amazed at how long it has lasted in the fridge that way. It's been vacuumed sealed for several months, and no mole has formed on it. I guess the combination of smoke and vacuum sealing prolongs the cheese's shelf life.
