One comment. Do you think the potatoes are mushy after 14 hours?

My wife is THE expert on these. If you really like potatoes, don't put them in at the start. They will turn to mush rapidly. She uses Red/New potatoes but puts them in more at the end because she wants them to be more chunky, not mushy.
