I am a hero at my house. My wife never has been crazy about barbeque but she has changed her mind. If she wouldn't have been watching, I would have told her how hard it was and how much time was invested. But can't do that. I put it in at 11:00PM, set it at 200, went to bed, then the next morning I turned it up to 225 and went to work. At 4:30 I pulled it out. Found a good recipe for carolina cole slaw and it was heaven.

I just may be doing that again on Thursday.
