Prime rib for Christmas

Did a choice standing rib roast for Christmas. Wanted to post some pics and the experience...

So, it was a Choice Standing Rib Roast from Costco. Four bone. About 7.5 lbs or so. $6.99 a lb. No Prime grade was available.

Did a rub from an earlier post of 2 TB cracked pepper, 1 TB kosher salt, 1 TB thyme, 1 TB onion powder and 1 TB garlic powder. Coated last night and wrapped in plastic wrap in the fridge.

Took it out at 10:00am this morning while opening Christmas presents. Using Alton Brown's recipe ( http://www.foodnetwork.com/rec...us-recipe/index.html ) but without the drying, preheated the 008 at 250 for about an hour.

Put three sprigs of fresh rosemary and 5 cloves of peeled garlic in the smoke box.

Placed the roast in with the probe at about 12:40pm. 200 degrees on the smoker therm.

Roasted for about three hours until temp was at 118 (missus likes it rare). Pulled and doubled wrapped in foil then towels then the cooler. Meat therm pulled then placed on the other side of the roast to ensure proper temp measuring.

Let rest for 45 minutes. Temp never came up past 119 (kind of disappointed there). Placed in a 500 degree oven on a broiler pan for 10 minutes to crisp the outside a bit.

Came out very rare but damn did it taste good. Did horseradish from the root mixed with sour cream, chives, and a little half and half. Not anywhere near as hot as I would have expected.

Overall, VERY good but still a little firm. I think next time I'll do the 250 for 90 minutes to 118 then drop the temp to 140 and let sit for four hours.

Still, totally worth it. Nice crust with just enough salt flavor without overpowering. Rosemary penetrated enough to make the flavor of the meat really good.
