Smoked Olive Oil

My wife and I were in California a few weeks ago and came across some smoked olive oil that was delicious. Thought we could get the same results with our Cookshack. So we poured about 2-3 cups of olive oil in a glass pie plate and set it in the CS with a 4 oz chunk of mesquite. Set it to 200F for about 2 hours, then turned off and let cool inside the CS. Turned out great, and much cheaper than we saw it in California for about $25 for a small bottle. Used it to make a great cilantro pesto, have used it in cooking (replace regular olive oil for a hint of smoke) and it was best as a finishing oil - it was great drizzled on some eggs. Next time we are going to try adding some chiles to the oil before we smoke it - not sure if we should use dry or fresh just yet. This was very easy to do and would definitely recommend it to others.
