When I was a kid my family used to eat a lot of spam when we went camping. It tasted ok and was definately more tasty fried a bit like breakfast sausage. It is very salty. I don't know that it would smoke that well and doing so would definately concentrate the salt. I smoked a couple corned beef briskets last week to make pastrami.Despite rinsing and soaking in fresh water they were too salty for me.
