Glad it worked out for you! I think the upper limit on the probe set temp is because not many people want bbq done much over 200F. Some brisket cooks like 205 or so and so you'd have to use a separate IT thermometer. For me, 200 is ok for brisket and for pulled pork. Hope your jerky turned out good!
