I did 3 that were between 10.5 and 11 lbs.
Brined in Smokin's Holliday brine for 14 hrs.
Smoked in FEC 100 at 180 for 5 hrs then on 250 another 50 min. Total 5 hrs 50 min.
Bird #1 on top rack = 168
Bird #2 on 3rd rack left = 158
Bird #3 on 3rd rack right = 162
Then foiled them for 1 hr.
All 3 were delicious.
