We are pleased to announce our cooking class schedule for 2011. Next year we will be hosting three restaurant/catering cooking classes and one competition cooking class. Please see the dates and details of the classes below:

Monday-Tuesday, February 7-8th, 2011: Fast Eddy’s Restaurant & Catering Cooking Class #1, $750

Monday-Tuesday, June 6-7th, 2011: Fast Eddy’s Restaurant & Catering Cooking Class #2, $750

Monday-Tuesday, October 17-18th, 2011: Fast Eddy’s Restaurant & Catering Cooking Class #3, $750

Friday-Saturday, December 2-3rd, 2011: Fast Eddy’s Championship Cooking Class, $400

Fast Eddy’s Restaurant & Catering Cooking Classes:
These classes will be taught by Cookshack President/CEO, Stuart Powell, Ed “Fast Eddy” Maurin, and David Bouska (David’s Processing/Butcher BBQ.)
This is an intensive hands-on class where you will be preparing, cooking, and serving baby back ribs, spare ribs, brisket, pork butt, salmon, hot links, and different cuts of chicken.
There will be sessions on smoke-cooking, grilling, holding, re-thermalization/re-heating, injecting and seasoning, setting up a buffet, plating and presentation, food safety, yields, and money saving/money making tips and techniques, etc.
All classes will be held in Ponca City, Oklahoma at the Ponca City Country Club. You will be in an actual commercial kitchen cooking on the Cookshack Charbroiler, Cookshack SmartSmoker electric smokers, and Fast Eddy’s by Cookshack pellet-fired rotisserie smokers.
The cost of this class is $750. This includes hotel accommodations on Monday and Tuesday nights; lunch and dinner on Monday; breakfast, lunch, and dinner on Tuesday; all cooking supplies and meat; tour of the Cookshack manufacturing facility; and a Fast Eddy’s tote bag filled with the following: monogrammed Fast Eddy’s by Cookshack class apron, Cookshack Barbecue Sauces (Mild & Spicy), Cookshack RibRub, Cookshack Brisket Rub, Cookshack Spicy Chicken Rub, Fast Eddy’s Championship Seasoning, Butcher’s Pork Injection, Butcher’s Beef Injection, meat thermometer, chef’s knife, tongs, fork, pastry brush, and binder with class recipes and blank paper and pen for taking notes.
Classes will begin at noon on Monday, and at 8:00am on Tuesday. We will finish around 7:30-8:00pm on both days.

Fast Eddy’s Championship Cooking Class:
This class will be taught by Ed “Fast Eddy” Maurin and David Bouska (Butcher BBQ Team.) They will be teaching their own personal competition cooking techniques they have used to win numerous grand championships all over the USA.
This class includes a complimentary KCBS Certified Judging Class that will teach you exactly what the judges are looking for when judging barbecue competition entries. You will also become a KCBS Certified BBQ Judge and KCBS member for an entire year.
Class will be held in Ponca City, Oklahoma at the New Creation Christian Fellowship.
This is a hands-on class where you will learn how to prepare and cook the four KCBS meat categories: pork ribs, pork butt, brisket, and chicken. You will be cooking on the Fast Eddy’s by Cookshack pellet-fired FEC100 and the FEC rotisserie smokers.
The cost of this class is $400. This includes all meals on Friday; breakfast and lunch on Saturday; all cooking supplies and meat; tour of the Cookshack manufacturing facility; one-year membership in the KCBS (Kansas City Barbecue Society); one year membership as a KCBS Certified BBQ Judge; one year subscription to the KCBS Bullsheet; and a Fast Eddy’s tote bag filled with the following: monogrammed Fast Eddy’s by Cookshack class apron, Cookshack Barbecue Sauces (Mild & Spicy), Cookshack RibRub, Cookshack Brisket Rub, Cookshack Spicy Chicken Rub, Fast Eddy’s Championship Seasoning, Butcher’s Pork Injection, Butcher’s Beef Injection, meat thermometer, chef’s knife, tongs, fork, pastry brush, and binder with class recipes and blank paper and pen for taking notes.
Judging class will be on Friday, December 2nd from 9:00am-1:30pm with a Welcome Dinner prepared by Cookshack at 6:00pm. Cooking class will be on Saturday, December 3rd from 8:30am-5:00pm.
