I have been reading the gobs of information here and armed with that information decided to go the GLH method. About an hour after I started I went to have a smoke, visit the smoker and it was literally raining in the smoker, you could hear in just like it was raining on the roof of the house. Water was pouring out the drain in a stream at times, the "blow hole" was just puffing away. I opened the door and got a giant steam bath, let it steam out for a minute or two and closed it back up. Needless to say that fixed the sauna affect and continued with the smoke. Couple of hour later with me opening the door every 40 minutes or so and we have a nice batch of jerky. This was basically an FYI in case somebody runs into the same issue, let it breath a little once in a while, doesn't take much, couple of minutes is all.
