Got my replacement Amerique a couple of weeks ago, UPS must have dropped the first one off a pallet, it had a dented top and door. Many thanks to the great customer service in particular to Tony, Karen, and Stuart. I first cooked a pork butt and later smoked some salmon, they came out great. After hearing some of the posts I was nervous about doing my first Brisket. I went to smart and final got a packers cut brisket, 14 lb, cut off almost 3 pounds of fat, seasoned with cookshack brisket rub overnight in fridge. Set up to cook at 225 and probe temp to 190, used 6 oz hickory, it was done at 17 hours, I left it in to go to the gym, came back 6 hours later, the smoker kept it at 140, I took it out and it was totally black, I thought oh my god it's going to be tough. Well I wrapped it in foil then a towel and put in in a cooler, no ice, took it out an hour later and cut it with an electric knife and the knife almost fell through, it was fork tender, moist and had a wonderful smokey flavor, the wife loved it and I'm now off the hook for the purchase.
