Another Xmas is on the way and I am smoking up more almonds which I use for gifts. I am using Pag’s standard recipe with about half the salt but I really like this new recipe too.

BBQ flavored almonds
Ingredients.
3 lbs. of raw almonds. I get these from Costco.
4 Tablespoons of smoked paprika. I buy from Trader Joes.
3 Tablespoons light brown sugar
3 Tablespoons Chili powder, you can use regular or Chipotle.
2 Tablespoons garlic powder
1.5 Tablespoons. Onion powder
1 Teaspoon. Garlic salt
2 Tablespoons of BBQ sauce-Your choice
½ Teaspoon freshly ground black pepper
¾ Teaspoon ground Cumin
¼ to ½ Teaspoon ground red cayenne pepper – Optional you can make it as hot as you want or leave it out.
2-3 oz. or as needed Water, Just add enough to make a nice slurry with all the spices.
Mix all spices, BBQ sauce and water in a bowl large enough for the almonds. When the mixture has formed a nice runny syrupy consistency, add the almonds and mix until all are well coated. Spread in a single layer on oiled perforated baking sheets. I spray my baking sheets with cooking spray then wipe with a paper towel first.
Smoke with your choice or wood. (I like hickory) for 4 -5 hours at 220. (Or you can do 3 hours and pull the pans and finish in an oven at 200 degrees for 2 + hours more)
If you want more crunches to your almonds you can go longer in the oven. I like to do the 3 hours of smoke and then the low oven. After 2 hours in the oven I just turn it off for the night and then give it 2 more hours at 200 the next day then turn the oven off and leave it in a few more hours for extra crunchy.
