Cherry is my favorite wood. I use two small pieces (one chunk cut in half) of cherry and one real small piece of hickory for my butts and ribs. I just want a hint of hickory so go easy on the hickory. You cannot go wrong with it. Apple is my second favorite and that goes great with ribs and brisket.
