I tried making a different kind of jerky. On my last order to CS, I bought a shaker of their Chili Spices. It smelled so good I got the idea to make some jerky using it. I mixed 3 TBS of CS Chili Spices with Tenderquick, & garlic powder. Trimmed & cutup 4.5 lbs of top round into my usual jerkey slices. Then added some meat to the 1 gallon baggie, topped with some of the seasonings & mixed. Mixed it up till it was even. Repeat till all the meat & seasonings are well mixed. It appeared a bit dry so I added some worstershire sauce until it looked wetter. Maybe 2-3 TBS. Close the bag and let it sit in my fridge for 3 days, turning every day. Filled up my dehydrator and dried it for 7.5 hours.
The end result was acceptable. It kinda tastes like a chili cheese Frito chip. The only comlaint was, the seasonings were too granular (meaning large). I will do this again but will run the mixture thru my spice grinder to make it more powdery. And of course, post the results.
