I have had my AmeriQue for about 1-1/2 years now and it does the same thing. When I first started using this smoker, it seemed strange that it cycled on/off so much, so I called Cookshack and they assured me it was operating normal. It still "cooks" that way today, and the food still comes out great, so I quit worrying about it. Enjoy your AmeriQue!!
My Amerique clicks on and off as well. Just thinking about this, it would seem logical to me that it would do it more often when the cook temp is reached but the probe temp is not. In that case it is trying to maintain the specified temp therefore shutting on / off to prevent over / under heating. Might be an indicator that the cook temp needs to go up some in order t reach the desired probe temp.
