good question. the spicey doesn't have a refrigerate label but the mild does. I've had them both in a cool pantry after opening them since getting them a few weeks ago. The wife just put them in the fridge since I didn't see the mild label. We have used 1/4 of both of them. The sauces are a hit around here. Mild, Medium (1/4 Spicey/ 3/4 Mild) and Spicey.

Paul Schatte of Head Country Seasonings said there is no need to refrigerate. I buy by the gallon and keep the open gallon in the garage fridge and the extras in the basement where it stays a little cooler.

I can't help you because my gallons of sauce never last that long. The sauce is too good!They do have good shelf life based on what Paul Schatte says.
