I found this recipe on food wishes website and everyone that tries them agrees that they are the best onion rings they have ever had. so give em a try

Crispy onion rings

Ingredients:
1/2 cup all-purpose flour
1/4 cup cornstarch
2 tablespoons instant mashed potatoes (this is what makes them crunchy)
big pinch of cayenne
1 cup cold club soda and it must be cold
mix these ingredients and let sit at least 10 minutes

dip rings in mixture then in panko crumbs
2-3 cups Panko (Japanese-style breadcrumbs), or as needed
fine salt to taste right out of the fryer
fry in vegetable or peanut oil at 350 until golden brown
2-3 yellow onions, cut into 1/4-inch rings
enough for about 8 servings but last time 4 of us ate them

Vicki you won't be disappointed just one extra thought. if you are making more make sure and don't double the mixture but make them separately. i tried to make a double batch and the onions at the end didn't turn out as well. so make the mixtures in different batches. i also add panko crumbs as needed instead of just placing them all in at the start.
