You might post for Stogie and see about making some jerky.Elk,like venison,is very lean and I don't have great success in a smoker.If it is ground,you can add some ground pork or sausage and smoke it like hamburgers.If you don't like gaminess you mights soak 24hrs. in salt water,rinse well and proceed with your recipes.Hope this helps a little.
