Well I have successfully ( FINALLY) completed my first smoked pork butt! It took A LOT longer than I had expected. After all the work and all of the waiting...... I wish I had done 2 or 3 butts! hahahahaha I am not sure there is enough to share outside of my family! hehehehe Everyone is picking at it, gosh what are they thinking; we are at a pig pick'in! hahahaha
Just to let you know....
I seasoned my pork butt with my own seasonings and let it absorb the spices for several hours. I put the 7.68 butt on the top shelf in my smoker with 2 and 5/8 oz of hickory (2 pieces) at midnight with the temperature set at 200. At 6 am it was at 140* and I turned the smoker up to 225*. I hit my plateau 1030 am and it lasted HOURS!!!! I never peeked although I was soo tempted. My pork finally hit 195* at 4 am. My butt cooked about 28 hours. I THINK next time I will pull it off sooner as it was WAYYYYYY too tender for me. It was sooo easy to pull and YES everyone loves it even the kids (teenagers). I sure hope I will enough for dinner if they will stop pickin at it! UUGGHHHH

So if anyone has any rub suggestions or recipes that you care to share with me, I would love to have them! Thanks for all the support and encouragement through this learning process! So how long before I am an expert at this???? I hope long before my CS wears out!!! hehehehehe

Just a thought. I've had good success with Pork Butts starting them off at 225. If you want to speed things up once you're in the plateau, turn it up to 250 deg. Increasing the temperature during the last stage of the cook doesn't seem to have any negative effect on the quality of the finished product.

You will get a system down soon. Just keep smokin & experimentin'. Might want to try getting your butts on before midnight tho. I usually start at 8-9 pm with the temp set at 180˚ just in case I have a weird piece of meat that wants to cook fast. Get up in the AM and crank it up to 225˚. Butt is usually done by suppertime. Also, I believe you will find in the next few smokes that the times will shorten. One thing to remember - No two butts are alike!

There are several good rub recipes here on the forum. Personally I use the BRITU quite a bit (Best Ribs In The Universe), cutting back on about half the salt. The CS Spicy Rib and Spicy Chicken rubs are very good as well.
