Mike,here is one I served to go with the meats this weekend.....The coffee gives it a different slant and even Texans might shift off pintos and give it a try.
  • COFFEE BAKED BEANS
  • 1/2 lb. thick sliced bacon,coarse chopped and fried till crispy
  • 1/2 cup honey
  • 3[1 lb] cans pork n' beans
  • 1 cup diced onions
  • 1 cup red bell pepper,diced
  • 1 tbsp chopped garlic
  • 1 cup strong brewed coffee,I like New Orleans with chicory
  • 1 tbsp creole or coarse brown mustard
  • 1 8 oz. can tomato sauce
  • 1 to 2 0z..bourbon to taste

.......Saute' the bacon and remove from pan....Saute' the onions ,bell pepper, and garlic till soft.....Add pork n' beans ,honey,coffee, mustard, and tomato sauce....Stir well and simmer till warm through....Remove from heat and add crispy bacon and bourbon.....Place on bottom rack of CS,uncovered and bake till you are ready.....If they get a little dry on long cooks,add coffee as needed.....I do drain the pork n' beans.
