The title says "how many guests does a 40lb pig feed" but in the body, you want to feed 40 people with one pig.

Rule of thumb, ,in a larger pig[100 lbs +]about,one lb/person.
Thus ,a 40 lb pig,might feed 40, not heavy diners.
Of course it will depend on your sides and bread.
I'd probably cook a couple butts with it.

the smaller the pig the less the yield-so the problem is not really simple -at the 40 lb pig weight the yield is only going to be 25 to 30 percent whereas the yield on a 150 lb plus pig can be 45 to 50 percent
if I were going to feed 40 people I would get a 55 to 60 lb pig carcass weight
