It was well worth the time and money to attend the Cooking/Smoking class in Ponca City.

One instructor cooked slow and low so I am still confused as to why he is called "Fast" Eddy. The other instructor, Paul, cooks much faster and higher temperatures.

All together it was a great learning experience with some really great guys and gals who have a passion for BBQ and good cooking in general.

Loved it. Hats off to Cookshack.

The one thing I better understand after the class is that there is no secret thing when it comes to getting one's name called at a contest. It just comes down to meat selection, preparing it, timing it, etc. It is truly blue collar work done time after time.

Cookshack put together a nice and simple notebook outlining details on how Eddy and Paul do what they do. I have only been at this a few years so the best part for me was the hand's on food preparation and cooking that we did right along with the instructors. It was great to have my final product judged and suggestions offered by the instructor, Paul.

My two dogs were sure glad to see the left-overs I brought back home to them. At least they gave me perfect scores all across.
