I got her recipe in an email, sounds pretty good, will give it a try maybe this weekend. But I'm thinking smoking those chicken breasts for three hours at 200 degrees is gonna be waay overkill.

I'll use a probe and start checking before half that time is up.

Anybody tried the recipe yet?

I used to do some competition Q, dreamed up "Smoke for Brains" for the team name. Got a lot of comments.

I read the forum a lot and learn plenty, can always find what I'm looking for on the search. And there's always folks with a lot more knowledge than me who give great advice.

Sorry, should have done that first. Here it is:

Ingredients:
4 large chicken breasts, smoke-cooked and chopped
28 oz. can tomato sauce
2 pkg. taco seasoning
OR
28 oz. can enchilada sauce
8 oz. pkg. cream cheese, softened
1/4 C. fresh cilantro
1 pkg. small corn tortillas
1 large onion, chopped
1 pkg. Mexican Blend shredded cheese

Directions:
1. Smoke-cook chicken breasts at 200 degrees for 3 hours.

2. Mix cilantro into cream cheese.

3. Mix tomato sauce with taco seasoning or enchilada sauce.

4. Layer sauce mixture, tortillas, cream cheese mixture, chicken, onion, shredded cheese, and repeat once more.

5. Bake in oven for 30 minutes at 350 degrees or cook in microwave for 12-14 minutes.

Sounds good but the three hours at 200 minutes seems a bit too much....

Well, not to disagree with Karen, but if you cook them for time only, 3 hours at 200 will overcook breast.

THEN cooking them in an oven at 350 will overcook them even more.

If it was me, I'd cook them to about 145, cut them up add them and finish the whole thing in the smoker (set it at 250 or 300) skip the oven and the microwave.
