I've just put 2 Whole Chickens at 4.5lbs each into my 55. Put them in at 12:35pm expecting to cook them for 3 to 4 hours at 250*

Used Cookshack Spicy Chicken Rub and Vegetable Oil. In addition, I have 6 corn on the cobs wrapped in foil on the top and second rack (3 per rack)

This is my first time doing Chicken and Corn.

Any comments or adjustments you would suggest? Should I spray them with Apple Juice around the two or three hour mark?

Jim -- No need to spray those birds unless you want to add some flavor to the "usually less than desirable" skin, which is usually rubbery.

Watch that spicy chicken rub. It's just a tad on the fiery side! Eeker

Use a probe and take the inner thigh to 165* and you'll do fine.

Pulled the Chicken out at 166* and let rest in foil for 30 minutes. The results were fantastic! Moist, nicely smoked chicken to perfection. We did not eat the skin, so can't really comment on that.

The Corn? Amazing! Lightly foiled to allow for steam, my wife buttered, salt,peppered, and squeezed 1/2 lime on top of the corn prior to putting them in the smoker with the chicken for the full 4hours. The chicken was moist and the corn fresh and cooked perfectly.

This was our first time doing this so I hope it was not beginners luck.
