So I typically cook a rack of ribs for me. That may last a night or two :-)

So here is my question…..

To avoid the processed / enhanced offering of the ribs in stores, I tend to buy a three Package from Costco.

Historically I’ve cooked one rack and frozen the other two for smoking later………

So here is the question……..

Do you think it is best to?
1. Freeze the uncooked ribs
2. Cook all three racks and freeze the cooked ribs

I do exactly the same as you except I usually get them from BJs. I have not been happy with smoked and frozen ribs (I usually do loin backs). Something, admittedly subtle, happens to the texture and flavor that reheating can't restore to the goodness of just out of the smoker. I think it has something to do with the residual aromatic smoke flavor and slight bark on the surface that just don't survive the freezing and thawing process. Also, I freeze the uncooked ribs without any trimming or membrane removal. Just my $.02.
