So last weekend I did my normal ribs (meatheads magic dust). However, I had some rib ends (raw) after trimming. I took the raw unsmoked ribs and tossed them in zip lock bag with Adobe complete seasoning & a little Goya seasoning packet. I grilled the "scrap" rib/riblets on the weber charcoal and left them on indirect fire for 45 min. They were suppose to be my chefs (home chef) screw up treat.

Everyone who tried them thought the "scraps" where better than my regular ribs.

Anyone want to share a rib rub recipe for the smoker that is Latin American? Or hints what ingredients/spices to add to my rib rub?

I've been using this recipe from about.com for a number of years.

All-Purpose Mexican Seasoning Mix

INGREDIENTS
1/4 cup dried oregano
3 tablespoons dried chile powder
2 teaspoons cumin
2 teaspoons garlic powder
1 tablespoon onion powder
1 teaspoon salt
1 pinch ground cloves
1 pinch ground cinnamon

Use Mexican Oregano if you have it. Little different flavor than the Greek oregano.


Also tried this one once, but preferred the previous one.

Mexican Spice Mix Recipe

1/2 cup chili powder
1/4 cup Hungarian sweet paprika
1 tablespoon ground cumin
1 1/2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon ground dried chipotle chile pepper
2 teaspoons dried oregano leaves
1 teaspoon salt


Also this commercial rub ain't bad either: Latin Heat Spice Rub Looks like it has similar ingredients as well.
