Just a dam well built smoker. I read this forum for a while before jumping in and buying a 50. Saw alot of post about temp flux, smoke comming out the door, wood not burning to an ash, exc, exc, exc. Well I did'nt let any of that discourage me in my decision and man am I glad I did'nt. My break in went like a fine tuned watch. Being curious I did check my temp flux and it was 50 deg up set at 225 and when it hit its lowest point 200 deg at 9:16 it started climbing again and was at set temp again at 9:23. I am sure once there is meat in the cooker (tonight) these will narrow. I had 10oz of wood in the box and it all turned to ash and guess what no smoke out the door. Like I said maybe I am lucky but I dont think so. I think I'll keep it for a while.

Don't try to analyze the smoker temps too closely. It works and has for 35 years.

We've had a few engineering types come in and use an electronic analyzer to monitor the temps.

Mostly you just need to learn the "how" of that element.

What you want is average temps. That element, just like the oven in your home, starts up and overshoots and settles down to the temp you set. If you watch it when it's cycling, it will go up and down in temps.

If you want to see the temp cycle, look for the post in the open forum "CS vs ST" and the guy at the Charcoal store has mapped them.
