Mahi or Dolphin about 1/2 inch thick. We used 1 lb.

Marinade
1/2 c soy sauce (kikkoman)
1 c sugar
1 T minced garlic
1 T minced fresh ginger
1/4 c fresh lime juice
zest of 1 lime, chopped fine

Mix in a heavy saucepan and cook over med. heat until thickened. Store it in a jar in the refrigerator.
Jack thinned it with a little lime juice and soy sauce and marinaded the mahi for about 30 minutes.
We put it into the SM150 at about 200-250 deg. for about 20-30 min.

We served it with white rice and a cucumber thai salad.

Thai Salad

2 T crunchy peanut butter
2 sugar
1 T dark sesame oil
1 T vinegar(try white wine)
2 T soy sauce (Kikkoman) or more
dashes of hot sauce,like Marie Sharps habenero or a datil pepper sauce to taste

Vegetables
2 cucumbers, seeded, julienned
1 green onion, julienned
1 carrot julienned(optional)
1 radish julienned

Mix marinade ingredients until fairly smooth. Stir into vegetables and refrigerate, covered at least 1 hour.
