Put two pork butt's in at 6:30am, this is what happened inside my model 50. Pork butt internal temp was 45 deg, pluged in power cord set temp control to 225 deg after appox 20 min temp had reached 225 after 35 min temp had climed to 257 deg and stopped, temp fell to 205 at the 1hr mark then started to climb and reached 241 deg at 1hr and 15 min and then fell back down to 205 deg at 1hr and 45 min. seems like an avarage of 225 deg. Is this how it should be working?
After 5 hrs pork butts seem to be holding at 170 deg interinal temp, I thought about turning the temp up but decided to just let it go until they hit 190 deg. Is this what I should do?

Yes, just be patient. Pork butt is going to take from 15 to 24 hours to reach 195 degrees for pulling from my experience, depending on the size of the pork butt. I cook mine at 225 degrees.

Temperature in the 50 will fluctuate, so don't worry about that. Mine averages 225, but has fluctuations.

Pork butt will hit a plateau temperature around 165 to 175 and may sit there at that temperature for five to six hours or more. It will eventually push on thru the plateau and will work it's way on to your target temperature for pulling of 195%. Just be patient though, you want it to cook low and slow.

Sounds like your Cookshack is working fine to me.
I have model 55 and have even seen meat temps fall one or two degrees. Be patient because the cooker is "full on" or "off". The temp will average out over time. Do not be in a hurry. They are done when they are done. I have learned this first hand. You can not hurry or speed it up. You will be rewarded for patience. I never open the door until the probe hits temp. I then test it for texture and check other places.
