please help,
my wife peggy has a birthday coming up and i wanted to surprise her with smoked mullet since she would crawl over broken glass to get it!!!
can any one help me????
i sure would appreciate it

seasonings sure are simple
will cook this for peggy after we get back from fba in clairmont florida assuming we still have a house after francis goes thru. ah what the heck i will put the smoker under the house and carry bag of charcoal in the truck to keep it dry lol.
everydays a holiday here in florida and guess what the trailer with my sm150 and fec100 is supposed to be delievered friday pmsl Big Grin

Hi Prisonchef, Tom, et al-

I found my archived images of my "first Cookshack mullet cook" and will send them to Smokin for him to post in the appropriate Seafood spot, or here or both if he cares to.

I would be careful not to overcook the mullet in the smoker, and not to put in to much wood.

Also, if you want to get a little crust on the fish- put it under your oven's broiler just before serving.

There used to be a place here in Tampa called the Mullet Inn. They made the best mullet I ever tasted. In retrospect, I think they may have brushed a little BBQ sauce on the surface before smoking them. I also put some of their sauce on the mullet when eating them. They also had mullet roe (in season) that you could get smoked or fried. Man, was that good! Now, apparently, it all goes to Japan because they are willing to pay out the gazoo for it.

If you have access to the roe, you might consider smoking that in the CS!.

I'm waiting for the storm to do it's thing here in Tampa. It's really nice right now. The predicted course of the storm, and hopefully it's decreased intensity as it gets on land will mean Tampa Bay dodges the bullet again! We surely have been lucky. I live on a tiny island that would be inundated if a strong storm surge comes up the Bay.

thanks for doing that for me. hope tampa dodges the bullet. here in st augustine the wind is coming up guess it is a steady 35mph with gusts.
my dad in indiananpolis called with his every year i told you so (heard this for past 34 years). told him hang on old timer indianapolis is gonna get it lol refer to hurricane center 5 day projection. he cant he refuses to get a computer. ah well got to find the humor where we can. good luck to you!!!!
