Hello All,

Just a quick post, I'm brand new to this site and I just picked up a 2000 160 yesterday from an auction in MPLS, brought it home, plugged it in cleaned a grate, added some misquete chips and had the best spare ribs I have ever made! I'm not real new to BBQ but what a difference in taste. I guess it's true if you want great tasting food cook it in a great oven! I was so impressed I ran home for lunch and stuck a shoulder in just to see if I was still dreaming from late nite!

I do have one question, it seems acording to the display that the temp varies about 20 to 25 degrees during the cooking process, is this normal? Please advise and thank you in advance.

Totally normal.... as long as it stays in the ballpark of the temp you set it to.

When I got my 055 5 years ago... I checked the actual oven temp when set to 225. The temp swung from 185 to 265 but that's an average of 225. That was before it was truely seasoned and I expect it to be closer now.

But.... I never checked it again, and it does a beautiful job of cooking. Don't overthink the issue.
Heck I think you have it all under control. Bring smoker home,put in meat, take out when done. Eat some quality Que, why even think there is something wrong?...cause cooking with a CS is just that easy.

Yep, have to agree with everyone just don't over think it.Make sure you don't overly clean it up! Leave some of that well earned smoke on the walls,cause some thinks it actually helps with those swings.

I've found in my little CS, that larger loads tend to cook a little better,as far as swings are concerned.

Just duck tape over the control if it bothers you. LOL

Were having a get together tonite so in it right now are three slabs of spareribs two fatties on top and two chicken breasts right below. I ran some errands and got back home two hours later and the smell OMG I'm going to start playing blues music and buy a Cadilac with some rims! It is always a great day for BBQ!!!!!!!!!!!!!!!!!!!!!!!
