Hi everyone,
I have been reading as much as I can while impatiently waiting for my smokette to arrive. I do have a few questions for which I can't find answers:
1) Do you all use rib racks when smoking? If so, are you using them for their ability to hold meat or because it makes them taste better?
2) If I should get them, their are some Steven Raichlen racks on Amazon that are about 14" x 12". It appears that they will fit in the SM008..is that what people use?
3) Finally, I am finding it difficult to decide what wireless thermometer to purchase. After reading as much as I can digest/find/google, I am thinking I will get the Maverick ET-73 ..but I sure like the Nu-Temp also. Any advice from owners of these would be appreciated.

1. Racks will not make a difference in taste.
2. Buy whatever suits you if you are going to do racks.
3. Go with a Taylor brand therm. They will have either a 10-year or lifetime warranty. Buy two. One will eventually crap out. You'll have a spare on hand while the other is in the shop. My first Taylor lasted 5 years.

I use the Maverick ET - 73. I have two of them one for a spare. I like them because of the hot Texas summer I dont have to go outside to see the temps. The batteries seem to last forever however maybe not the ones that come with the unit. The only thing that is funny about them is you have to turn both units on at the same time so the transmit and remote unit sync up. It explains this in the instructions.
