While I've never really considered trying these smoked, I may have too.

I like to take chicken liver and wrap with a partial piece of bacon,toothpick to hold together and marinate in a dish that has a marinate mixer that consists of... salt, pepper, garlic salt, Worcestershire sauce, and French dressing. After 45 minutes or so,drain, then I put them in a covered dish and microwave at 70 power until done.

I would think a fella could put in a shallow pan and put some smoke to them, before crisping the bacon up???

These make great appetizers.
