Pig Candy AKA Candied Bacon

Ingredients:
Thick Sliced Bacon ~1.5 pounds
Turbinado Sugar (Sugar in the Raw) 1/4 Cup
Brown Sugar 1/4 Cup
Bourbon 1/4 Cup
Lemon or Lime Juice 1 TBL
Cider Vinegar 1/2 TBL
Kosher Salt 1 tsp

Whisk ingredients in a bowl.
Dredge the bacon and place on a wire rack or
frogmat.

Smoke/Cook @ 350 degrees for about 35 minutes.

The FEPG 1000/500 is big enough for 1.5 pounds (about 15 slices). To do more in one run I will use my FEC 100.

When cool, serve with whipped cream.

I've not a fan of the high heat for two reasons. Doesn't give enough time for the bacon to take on smoke and the amount of sugar used can VERY easily burn. It's a common comment I hear from first time users. Just beware.


I use applewood smoked bacon and watch it closely. 35 minutes is good, 40 minutes is burnt!
