I do pork loin with a citrus marinade/sauce. In a sauce pan, combine 1 cup freshly squeezed OJ, 1/2 cup freshly squeezed lime juice, 2 tsp orange zest, 1 tsp grated lime zest, 1 tsp cumin, and 1/2 tsp cayenne. Finely mince 1 shallot, 1 bunch green onions, and 5 cloves garlic. Saute the vegs until colored and add to the sauce pan. Heat until reduced by 1/4. Cool and add to a freezer bag with the loin and refrigerate for at least 3 hours.

Remove the loin and reserve marinade. Smoke at 225F with a target temp of 140F-145F. Meanwhile, heat marinade until reduced by 1/2. At 125F, remove loin, place on double foil, drizzle with 1/2-1 cup of remaining marinade and tightly close foil. Return to smoker until done. As I recall, normal cook time is 3-3.5 hours. Remove from smoker, tent with foil for 10 minutes,carve, and serve with marinade on the side.
